Spinach Alfredo

This is one of my own creations. It is really simple. I used a jar of Alfredo sauce and spiced it up with some garlic, roasted tomato pesto paste, and some Italian spice. I added olives and frozen spinach to it. Cooked up some Penne and Voila!

Sheperd's Pie


As requested by the Mr. I tried to make Sheperd's Pie. With the lacking of ingredients, there were some changes to the recipe. I used instant potatoes instead of making my own and I had less than a pound of beef to work with. I didn't have any actual broth or stock, so I used 'Better than Bouillon.' And I only had some left over carrots and broccoli to add as veggies to the dish.


Banana Muffins


So I went ahead and tried these the other day. As usual, I did make a couple of slight changes. It seemed like a ton of sugar so I did a little less than 1 cup of sugar and somewhere close to 3/4 cup of brown sugar. I also accidentally added a whole teaspoon of Cinnamon (plus some) cause I misread the recipe. And only three bananas were added cause that was all I had. And I didn't make an frosting cause I was making muffins xD Not cupcakes... I took them over to Family Night Dinner and most seemed to enjoy them. The flavor was really good though I personally thought they were a little dry but were amazing when eaten with a glass of milk.

Very good! I added sauteed onions and red bell peppers as well as using two different kinds of cream cheese (Chive and Onion as well as garden veggie). With the onion-y cream cheese as well as actual onions, it was a touch too much for me but Mr couldn't really taste it. The biggest thing I would change the next time I make this is the bottom crust. I think I will either back the bottom layer of dough partially or cook the whole thing on a lower rack because the top was very done but the bottom not quite cooked. Still tasted amazing!

Parmesan Roasted Potatoes

As usual, my version is a little different, I used a different kind of potato (So I adjusted the time and oven temp some). I also used a combination of real garlic as well as the garlic salt and a combination of real parm with a little of the "shaker" parm.
I don't know if it was a combination of things or what but they ended up tasting exactly like my step-dad's  baked pumpkin seeds. With that in mind, it made it a little difficult to enjoy them alone or even with ketchup but, they were really good dipped in a little bit of ranch. I'm not saying that they were bad, just not something that I really enjoyed.

Apple Topping (and French Toast)

So I put mine on waffles instead and I made mine a little smaller. Maybe next time I will try the actual slices to see how different it is.  (And find a way for me to slice them a little more evenly because the knives we have suck)
I served mine on a waffle with maple syrup and one with cream cheese (both of which were really good) my Mr. had his on Nutella and says it was tasty as well.

So I used this recipe as a base to make my own version. I used Condensed Mushroom soup instead, didn't have any veggies around and I added more random spices. I also had to use minute rice as that is all I had around so I added a little more rice then was called for.

Potato and Cheese Perogies

Well, not sure what happened but mine didn't turn out looking much like these. There seemed to be a lot of bread/not much filling and there was no way mine looked as nice as these. While they were deformed looking can't say that potatoes and bacon wrapped in some sort of bread are bad, just not quite what I thought they would be.  The dough would be fun to experiment with and see what else can be done with it.

Chex Lemon Buddies


I made them for the Christmas holiday and they were a wonderfully light contrast to the heavy flavors of so much Chocolate. They would also be great for a summer snack.

First off, that picture does it no justice. Second of all, this is a really good dish. I haven't tried it with peas because a certain someone (my mom) doesn't like them. The first time my Boyfriend and I made it together was pretty interesting and fun; it ended up really tasty though.

The next time I make this, I am going to have to get a good picture of it!

Slow-Cooker: Asian Pepper Steak



I have had this a couple of times and I have liked it. I personally did not like the cilantro nor the lime on top, instead I like putting Chow Mein crunchy Noodles. I think it adds a nice texture. I also would prefer if the meat was in smaller bites but that is easy to do after cooking it.
Really good with with little bits of pineapple in it.

Mashed Potato Soup

This is a pretty awesome idea. I personally use Idahoan mashed potatoes instead of left over potatoes; just make as the directions call for and the follow recipe listed above. While awesome on just its own, it would be even better if used as just a base. As in make this but also boil up some potatoes and and add them as bites to the soup, it would make it even more filling (though it is already). Or if you are using chunky left over mash potatoes,  you would be golden.

These were pretty good! It was nice because I was able to get Mr. to help out too! We tried them with mini pepperoni and olives. Next time, I think I will add more cheese and even though the recipe says not to, I think I want to try adding a tiny bit of sauce inside. It was fun dipping it but at the same time, it made the sauce a bit over powering.

Best part about these is that you could put just about anything in it! You could even do dessert ones; filling it with fruit or pudding, topping it with maybe sugar & cinnamon or drizzled chocolate...
