P.S. I Love You Cake


Look at the gorgeous cake! This cake is so amazing! It did surprise me several times. First, because you just add a package of pudding to the cake mix, I thought it would make the base cake dry, but it did not. Then I thought that putting the pudding on the top would either not soak into the cake or make the cake almost too moist. Neither of these were the case. It turned out perfect! Note: The second time I made this cake it didn't turn out quite as well. I think that it is important to add the pudding on top when the cake is still warm.

The best part of this recipe is how much you can change it. You could use lemon in stead of coconut (and actually ad the poppy seeds which I didn't add for this cake) or you could do chocolate and butterscotch! I'm not sure which I will do next because they both sound awesome haha



Baked Lasagna in a Bun


Super good, a bit of a pain to prep (except if you have your Mr. take the time to cut out each bun haha) but worth it in the end. The left overs are so convenient, particularly for those looking for something to grab and run with. Just throw into a bag and you are set to go; they can be eaten by hand, especially if you don't warm them.

Mushroom Porcupine Balls

I really love these. I don't usually like mushrooms but this is one exception. I learned about the recipe from my aunt many years ago. Anytime we were down in Boise to visit my dad, a variation of this is what she always made for us.

I added finely chopped fresh red pepper and grated in a couple baby carrots to add a little nutrients to it. You could taste the carrot and the red pepper added a nice little kick.

Bunch a Banana Bread


I don't think I will ever make normal banana bread again. This recipe was amazing and made so much banana bread/cake. The recipe varies from their banana bread recipe by only 2 teaspoons but it make a 13x9 pan of bread! Cut it in fourths and you have four loaves (I did this and gave away 2). And it was so easy!
I also ended up with an extra banana left over so I cooked it up on the stove with some butter and brown sugar and put it on top a slice of bread (and maybe some vanilla ice cream....).

Italian Sausage Melt Casserole


It turned out awesome! We used Red peppers which ended up being a really nice taste and didn't use any cheese (cause with Alfredo sauce, why would you need more cheese? Aka we didn't have any). The biscuit crust is super buttery and would be good with many different types of toppings. I'm going to try Hamburger, veggies and brown gravy next so that it is like open faced pot pie.

Cream Cheese Brownies


Super yummy! When they were still warm, Mr thought that they were a little too rich but I didn't think so. There are so many things you could do with the cream cheese filling. A bit of lemon zest would be amazing. For holidays you could try adding mint and food coloring to it.


Zatarain's Rice Stew

It filled both my Mr and I for two meals! It was super tasty. If I try out other combos, I will list them under the recipe link above.

Sheepherder's Breakfast


This was what my Mr wanted to have for Christmas Eve dinner. Instead of bacon we used sausage because it was what we had around. I also used less eggs because I couldn't actually fit many in the pan I ended up using. Finally, and probably the best part, we decided to top it with country gravy. It was so amazing I ate way too much!
